OMG! Who know cauliflower could be so yummy! This is a combination of two delicious recipes that I have added my own twist to. Cauliflower is one of my kids least most favorite vegetables. However, Cauliflower is an extremely nutritious vegetable and I wanted to make it apart of my family’s diet. This recipe was inspired by Tasty Buffalo Cauliflower Tacos
and G-Free Foodie Roasted Shrimp recipe.
Servings: 6-8 tacos
For the cauliflower:
1 head of cauliflower
3 tsp garlic powder
1 tsp salt
1/4 cup hot sauce
1/4 Ranch dressing
2 tablespoons melted butter
For the Shrimp:
1 pound of raw shrimp
3 tablespoons of Olive oil
2 tablespoons of garlic powder
2 tablespoons of lemon juice
1/2 tablespoon of salt
1/2 tablespoon of pepper
2 tablespoons Parsley Flakes
1.Preheat oven to 425ºF
2.Cut the head of cauliflower in half then into bite sized florets
3.In a large bowl toss in the cauliflower, garlic powder, salt, hot sauce, Ranch dressing and melted butter.
4.Spread cauliflower evenly across in 1 layer onto a baking pan and roast for 40 minutes, mixing after 20.
5.leave oven heated for Shrimp.
6. In a large bowl toss in the Shrimp, Olive oil, garlic powder, lemon juice, salt, and pepper.
7. Spread the Shrimp evenly in 1 layer across your baking pan.
8.Roast in the oven for 6-8 minutes.
9.Assemble your tacos any way you like and Enjoy!
