Taco Night made Easy-Slow Cooker Shredded Pork Tacos

Taco Tuesday is my family’s favorite night of the week, especially for the kids they LOVE tacos and I love them too, but there’s a lot of prep work that goes into making tacos for the whole family. Usually, I’m the last to sit down and try to enjoy my now cold taco.

Recently When we were given the opportunity to partner with Produce for Kids, I knew I had to try their Slow Cooker Shredded Pork Tacos recipe.

This recipe will take the prep work out of dinner. Here’s what you’ll need

Easy-Slow Cooker Shredded Pork Tacos

Ingredients

2 cloves garlic, minced
1 bell pepper, sliced
1/2 large RealSweet® Vidalia® onion, sliced
1 1/2 teaspoon chili powder
1 1/2 teaspoon Italian seasoning
1 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound pork tenderloin
8 (6-inch) whole wheat tortillas, warmed
1/2 bag prepared Eat Smart® Any Vegetable Salad Kit

Directions

First Combine all of your seasonings together and Coat pork tenderloin with seasonings mix. Place on top of onions and peppers in slow cooker. Cook on high 4 hours. Once pork is finished, shred while in a slow cooker and combine with onions and peppers. Serve pork on tortillas with salad.

 

 

 

I like to serve these tacos as a taco bar. The kids love getting to make their own tacos by themselves.

Tip: Keep it kid friendly and colorful layout as many choices as you can on the table for the kids to choose from.
